Er ist zwar in die Kategorie Junmai einzuordnen, wird aber langsam bei niedriger Temperatur wie ein Junmai Ginjo gebraut und bietet daher ein fruchtiges, leichtes Aroma, eine tiefe Flle und einen reichen Geschmack. Die Textur ist leicht milchig, fast cremig. Am Gaumen zeigt sich der Yume Ikkon vollmundig, aber nicht schwer. Er bringt eine feine Sure mit, die fr Struktur sorgt,
